Desserts

Yesterday I made these two desserts for our get together with Mom and Rex, Jill and Gary, and all the kids...

The first is an almond flavored white cupcake with raspberry/whipped cream filling.

The second was toasted pound cake with mascarpone cheese and apricot preserves topped with almond slivers.

I'm not even going to lie, I was SO impressed :) It was fun to take the time to do something different. I've been such a "shortcut taker" lately, so it was fun to be creative and create something YUMMY! I'm already planning to do the cupcakes for our family for Valentine's Day, maybe with strawberries. And the other's I think I'll try with a different fruit topping just for something different. Neither were all that difficult, and I think everyone enjoyed them!
